How does a CAS (complex adaptive system) such as a butterfly evolve?

By Darvin’s theory, the evolution is driven by random mutation filtered by natural selection. It is still strange that a butterfly can evolve into a coloring scheme that gives it an adaptive trait such as the color of its wing to mimic the surrounding. Given the number of Amino Acid combination that is possible, how could such mutation be possible?! Is there any conciousness in this evolution process? How is such conciousness stored in the Gene?
